Hall's Pumpkin Patch Muffins Whiskey and Rasins W? Walnuts







Hello to all my foodies friends out there in web land, just a note to say I hope all is well for you this October.  Today we are going to be sending you a new recipe made with Pumpkin.  





Pumpkin Walnut Raisin Muffins



1 box vanilla cake mix
3 eggs beaten
1 stick butter, melted
1 and 1/2 cup canned pumpkin
1 cup buttermilk
1 tsp. vanilla
1 tsp cinnamon
1 tsp apple spice
1/4 tsp all-spice
1/2 cup whiskey
3 T. brown sugar
1 cup chopped walnuts


Pre-heat your oven to 350 degrees and place your cupcake holders in your pans.  Mix the cake mix with all your spices.  Then beat your eggs with the buttermilk until blended.  Melt the butter and add it into the cake with the buttermilk, pumpkin in the mixture.  Add your vanilla.  Add your chopped walnut to the mix and blend well.  Then stir your brown sugar, whiskey, and raisins together and let them rest for about 10 minutes..  Then stir them into the cake mix.  Fill your muffins holders with the mix to their halfway point.  Bake your muffins for about 15 minutes or until done.

Its located in Johnston, S.C,.  It was her brainchild that she wants to do to get kids and parents out looking for that perfect pumpkin for decorating or craving.  Any who she asked me to write a mini cookbook on pumpkins and so there are 35 recipes in this mini cookbook that have been tested out.  This recipe is not in the book but it is the brainchild of a sheet cake recipe that's written in there.  The book has recipes on soup, desserts, even a cookie recipe.  Any who I hope all is well with you and I'll be posting again though the holidays.  If you have any questions about this or any other recipe just leave a comment or Facebook me.  Also if you not into recipes with a kindle or computer device then I do have copies printed of the cook book.


Pumpkin Pound Cake Pecan

1 package pound cake mx, Vanilla
1 tsp. vanilla
3 eggs,  beaten
1/2 cup butter, melted
1 cup milk
1 1/2 cups canned pumpkin
1 tsp. cinnamon
1 tsp. apple spice mix

pecans:

1 cup, chopped [pecans
3 T. Brown Sugar
1/2 cup melted butter

Icing: optional

1 stick butter, softened
1 tsp. vanilla
2 cups confectionary sugar
2tsp. milk

Mix first eight ingredients together until they are well blended. Mix the pecans with the sugar and butter.  Place half of the pecan mixture into pan.   Pour cake mix blend into greased pound cake pan and top the cake blend with the rest of the pecans.  Bake in a pre-heated oven on 350 degrees for about 50 to 60 minutes or until cake is firm in the middle to touch. or a tooth pick inserted into center comes out clean.  Icing is optional:  Beat butter until its creamy.  Start adding the sugar and vanilla and milk slowly until they are all well blended. .  When you cake is cooled down to torch and out of your pan, then you can ice your cake.  Its okay if the icing is not firm you want it runny to top your cake.  I like icing cakes while they are still warm, it helps keep them moist.  You should only let your pound cake cool about ten to fifteen minutes before you remove it from the pan.

Pumpkins, Pumpkins, Pumpkins, Holidays are closing in on us!

Spring is Here! French Onion Soup Yu

French Onion Soup This recipe can be found in Season 2, Episode 4 of Cooking with Madjon and Friends. Ingredients: 2 beef broth, 32 oz. each 1 chicken broth, 48 oz 4 beef bouillon cubes 2 T olive oil diced garlic salt and pepper to taste 1 T Mrs. Dash 1 T onion powder 1 T garlic powder 3 T sugar 2 bay leaves 2 cups red wine 1 tsp. thyme 2 tbsp. sherry 1 tbsp. Worcestershire sauce 3 tbsp. flour 5 cups sliced onions Topping: Toasted bread or croutons Choice of shredded cheese, Swiss or Parmesan recommended Directions: 1) Combine chicken and beef broth in a deep pan over medium heat. Add 4 beef bouillons. Add Ms. Dash (salt-free), garlic powder, thyme, sugar, red wine, sherry and Worcestershire sauce. 2) Slice 5 cups of onions. Melt 8 tbsp. (1 stick) butter and garlic in a skillet on medium heat. Add a dash of olive oil. Add onions and saute until clear. After onions are done, add 3 tbsp. flour and stir for an extra minute or two. This flour will help thicken the soup. 3) Add onions to soup and add salt and pepper to taste. If you plan to use a salty cheese like Parmesan, may want to go easy on the salt. Cover and simmer on low heat for 30 minutes to allow it to thicken. 4) Top soup with toasted bread. Top with your choice of cheese: Parmesan, American, Swiss.

Southwestern Salmon YUMMY

Southwest Salmon Ingredients: 1 16 oz. can of black beans 1 16 oz. can of corn 1 small can of green chilies 4 salmon filets, skin on 1 papaya (or mango, or a well-drained can of diced pineapple or peaches) 1 bunch of green onion ½ medium sweet onion, diced tbsp. minced garlic olive oil chili powder, cumin, salt, pepper, coriander Directions: 1) Drizzle the salmon filletshttp://www.aikenstandard.com/astv/madjon/. with olive oil, then sprinkle garlic, salt, pepper, chili powder, cumin and coriander over the fish side. Rub the spices into the fish, and let sit, covered, in the refrigerator for 30 minutes. 2) While the fish is sitting; peel, seed, and dice the papaya; cut the dark and light green stalks of the green onion into slices no more than ½ inch long. Hand-combine the fruit and onion in a bowl. Allow to chill in the fridge. 3) Drizzle olive oil into a saucepan, and simmer the sweet onion and tbsp. of minced garlic until the onion begins to turn translucent. Then add in the black beans, corn, and green chilies. Add in chili powder, cumin, and coriander to taste. Let simmer on very low heat while the salmon is prepared in another pan. 4) Heat a pan on medium-high heat, and drizzle with olive oil. Place salmon filets skin side down. Cook for 4-7 minutes, or until the filet is cooked half-way through. Flip one time, and cook until the fish is seared. It should be medium to medium-rare in the middle. It will continue to cook once removed from the pan. 5) Spoon black bean mixture onto plates, and lay the salmon on top. Top with a generous amount of the fruit and green onion mixture, and serve immediately. Find more recipes and videos at

chicken Buffalo Spring Rolls

Madjon makes Buffalo Spring Rolls and Marinara & Feta Cheese spread with Croutons in “The Wedding Tasting” episode of Cooking with Madjon and Friends. Buffalo Spring Rolls Buffalo Sauce Ingredients: ¼ cup hot sauce* 1 tsp. Worcestershire sauce ¾ cup ketchup 2 tbsp. vinegar 1 tsp. mustard 1 tbsp. butter, melted 1 tsp. salt pepper to taste 1 tsp. onion 1 tsp. garlic powderDirections: Mix all ingredients. *May use a smaller amount if worried about the heat! Buffalo Spring Rolls Filling Ingredients: 2 cloves garlic, chopped 1 pound cooked chicken ¼ cup sauce 1 package small egg roll wraps 1 package shredded carrots 1 package slaw mix 6 green onions, chopped 1 tbsp. garlic powder 1 tbsp. onion powder 1 tbsp. fresh garlic ¼ cup chopped cilantro salt and pepper to taste 1 egg + 1 tbsp. water oil to fry Directions: Mix all ingredients thoroughly. Roll filling in spring roll pastry wraps. Fry in a shallow skillet with heated oil. Flip and cook other side. The mixture is enough for 24 rolls. Marinara Sauce Marinara Sauce Ingredients: 1 bell pepper, diced 1 onion, diced 1 tbsp. onion powder 1 tbsp. garlic powder 1 tsp. tarragon leaves 1 bay leaf 1 tbsp. basil 1 tbsp. oregano 1 tbsp. Italian seasoning salt 1 tbsp. garlic 1 2 cup wine 1 can tomato paste 3 tbsp. sugar Directions: 1) Heat olive oil in a large skillet over medium heat. Add chopped garlic, diced onions and diced green bell pepper. Cook until tender and then add a can of crushed tomatoes. Add spices, red wine, sugar, tomato paste, sea salt and cracked pepper. Stir, cover and simmer over low heat for the flavors to mingle! 2) Toast bread for croutons. Feta & Goat Cheese Spread ½ cup Feta cheese 1 package cream cheese 1 tsp. Italian seasoning ½ tsp. onion powder ½ tsp. garlic powder Mix feta cheese, goat cheese, cream cheese and seasonings. Spread feta spread on toasted croutons, and top with marinara sauce. Stuffed Chicken Breast with Crab

Hello to all my foodie friends out there in web land hope all is well and your year is still fresh with lots of hopes and dreams coming true.  Me I've been out of town a lot, yep this will be our year of travel and adventure.  Am really looking forward to a trip were taking with friends to Alaska this summer.  Am also looking forward to eating my favorite foods which is lots of Crab and Salmon.  Nothing better to me.  Any-who I hope your try and enjoy this recipe.  I'd be adding some Onion and Garlic powders by dusting your chicken breast with it.

Super Bowl 51 Serve Hot Italian Roast Beef Sandwiches Go Falcons

Well hello to all my foodie friends out there in web land, just a note to say I hope you enjoy Super Bowl 51 and am pulling for the Atlanta Falcons, Hope they do some winning I hear its going to be a close game, well we shall see.  I do hope that you try this recipe its quite yummy and easy to make.  You serve it up with some Buns any type will do.  This should serve 10-12 people.  You also want to add some juice to your sandwich, that's where your find the flavor.

Hot Italian Roast Beef Sandwiches

4-5 pound Rump Roast
put 8 slits into the roast and place one garlic clove in each hole
Rub with Salt, pepper, 2 teaspoons each Garlic and Onion Powders

Bake at 375 pre-heated oven place roast on a rack and roast until done, remover the roast and let it rest for about 15 minutes and then cut the roast into thin slices, reserve your drippings

Now place the drippings into a crock pot and to the drippings you add:

2 cups Beef Broth,
2 Beef bouillon cubes
2 bay leafs
2 tsp Oregano, dried
2 tsp Basil, dried
1 tsp Thyme, dried
1 diced Onion
6 tiny yellow Texas Pete Peppers

Add your sliced roast to the broth and cook on high for about 2 to three hours in the crock pot.  Keep it warm and serve with your favorite buns but remember to add some broth when you make a sandwich.  Bona' Y'all.

MadJon's Creamed Onion Soup-Mushrooms Optional

Hello to all my foodie friends out in web land, I hope your new year is going all your way with lots of luck to you and yours.  This is a recipe I made up after I ate at an Italian Cafe here in our area and we ordered their Onion Soup and it was tasty but seemed to thick for soup, the texture was more like stew so I went to the test kitchen and remade the recipe to our own liking.  My hubby loves it and so did our friends that we played train with on that evening,  So you get to share in the pleasure of this wonderful warm soup.  It would pair with foods like a Quiche, fish, or chicken dishes.

Creamed Onion Soup

1 Onion, diced
6 cloves Garlic, minced
t tsp, salt
1 tsp. black pepper
1 tsp. onion and garlic powders
1 tsp. Mrs Dashes
1 tsp. crushed dried thyme
1/2 stick butter, melted
4 TBSP flour
2 chicken bouillon
3 cups chicken broth
2 cups cream or low fat it with skim milk
oyster crackers for the top or seasoned croutons
optional 1/2 package sliced mushrooms, sauteed in light oil then tossed into soup

melt butter, add onions, garlic and saute until onions are clear in color.  Then add the spices, bouillon, thyme, salt, pepper etc and cook about five minutes.  Stir in the flour until well blended.  Slowly add your broth to the mix, stir and simmer mix for about ten minutes.  Then slowly add your cream.  If you wish to add mushrooms just saute them with a TBSP of oil and toss into the soup and simmer another five minutes, serve hot with crackers or croutons on top.  Serves six.  Bona' Y'all.
