Anne Seymour Victim Advocate and Lobster Macaroni and Cheese

Hello to all my foodie friend out there in web land hope you are having a wonderful day with all the rain that we are having out there in Aiken.  Am so ready for some sunshine and warmer weather. A few days ago I had the chance to go listen on on a friend of mine named, Anne Seymour, from Washington DC area.  She holding a seminar on Victim Related Practices in Probation and Parole.  It turned out to be very informative for me as well as my daughter who works for the Aiken Standard, she has this way of wanting to figure out why and who done it of crime.  Any who Anne is a National Victim Advocate and co-founder of the Washington D.C. based non-profit Justice Solutions, specializing in criminal and juvenile justice, crime victims' rights and services, and community safety.  She has over 30 years experience, as the Director of Public Affairs for the National Office of Mothers Against Drunk Driving and co-founder director of Communications of the National Victim Center.  She has co-authored over 30 manuals and texts published by the office for Victims of Crime and the list goes on and on.  Ms. Seymour also was the recipient of the 2012 Joe Kegan's Award for Victim Services in Probation and Parole.  any who we had the pleasure of being her guest at the SCJJ in Columbia.  However the day before she was my guest on the "Cooking With MadJon and Friends" show.  Which she informed me that Macaroni and Cheese is her favorite food to eat.  She says its because she is half Italian.  That probable has something to do with it.  So we made a Lobster Shrimp Macaroni and Cheese for her only she did have to help.  When I asked her on the show to start with throwing this together, she looks at me and says,"I don't know how to do that"  I laughed and said can you stir and she says, "am a good stirrer."  Any who did you know that Thomas Jefferson is given the credit for bringing the American cuisine, called the creamy combo to us from France around 1802.  He also brought back a pasta machine and pasta from France.  Thomas Jefferson also served Macaroni and Cheese at a state dinner.  Woo Hoo Tommy boy!  That was one of the best things he could have done.  Then about 1937 during the depression era Kraft boxed Macaroni and Cheese was born.  The rest is history as we know it.  Are you ready for the recipe.

Lobster and Shrimp Macaroni and Cheese


Penni noodles                               1 pound, box, cooked according to box directions
Salt and Pepper                                       to taste
Shallots                                                   4 each, chopped fine
Garlic                                                      4 Cloves
Butter                                                      1 stick
Flour                                                        6 TBSP
Half and Half                                           4 cups
Onion and Garlic Powder                        1.5 tsp each
Paprika                                                     1 tsp
Mustard                                                    yellow, 2 tsp
Red Pepper                                              1 ½ tsp
Tomatoes Paste                                        3 TBSP
Hot Sauce                                                4 or 5 dashes
Sharp White Cheddar                             2 cups, shredded
Gruyere Cheese                                      2 cups, shredded
Shrimp                                                    1 pound peeled
Lobster trails                                           2 each, moved meat for shells and chopped
 
 
 
 

 

Directions:
 
Drain the cooked pasta and place in a greased oblong 9” by 13” pan.  Pre-heat oven to 350 degrees.  Place ½ stick butter with the noodles and mix with some salt and pepper, shrimp, and raw lobster.  Mix half the cheese into the noodles.  Now heat ½ stick of the butter into a pan and add the Shallots and garlic.  Cook until the shallots are clear in color.  Then add the flour and all the spices into the pan and stir.  Add the mustard, tomatoes paste, and slowly start adding about ½ the milk and stir.  Cook until thickened, add the rest of the cheese.  Mix until cheese melts.  Pour mix over the noodles.  Mix well.  Then, add the rest of the milk to the pan and stir slowly.  Cover the pan and bake for about 45 minutes, then uncover the pan and bake for about 15 minutes or until browned lightly.
